JB and I are on call!

I’m so excited to be doing this! I’ve had the idea of a Christmas cooking hotline bubbling away in my mind for years, but I always hesitated because I worried it would be too much to handle on my own.

But now that JB is part of the face of RecipeTin and it’s not just me, there’s two of us here to answer your questions. So for the first time ever, we’re opening up a hotline for Christmas cooking questions, bringing together home-cook practicality and actual proper chef experience (JB!), which means more ideas and better problem-solving for you!

So drop your question in the comments section below and we will answer as many as we can (we need to sleep, and we have some other work things to finish!). Ask anything you want, like:

  • Can I make this ahead, freeze it, or reheat it?

  • What can I substitute if I can’t find an ingredient?

  • How do I scale recipes up or down?

  • Help, something’s going wrong – how do I fix it?

  • Menu planning, timing, or oven logistics chaos 😅

Even though our last day of work is this Friday, JB has generously agreed to continue helping me with questions right through to Christmas Eve. Thank you JB, you’re the best.

    Our meat eating family is expecting to have a vegan guest this year. Do you have any ideas for what to have with roast veg rather than meat and also something for dessert without eggs, milk or butter (we usually have pudding and custard)?

    I absolutely love your books and online recipes which have become my go to when searching for ideas. Great you now have JB on board as selfishly I can look forward to more brilliant recipes. I made your White Christmas Rocky Road last week which was fabulous and have been asked by my brother to make him one over the next few days. Pavlova Bombs are on my list to take to a neighbours Christmas drinks evening this Saturday. My question is probably not what you have in mind but can you give me a recipe for individual Salmon En Croutes? I have looked at your past salmon recipes and guess it is simple enough to adapt them to individual portions but I have a friend staying over Christmas and need to make sure I get this spot on so thought I would seize this opportunity and ask as it’s a dish I would like to cook frequently. Keep up the fantastic work as honestly your recipes are just so much better and cleverer than others out there. I often imagine what it must be like being in your kitchen and would bet it is a really fun experience.

    One question though if I may : our holidays in New Zealand are nearly over but we will spend the end of the year in Sydney. In which book store can I find your books ???

      Also, what is the best way to gently heat up the festive Christmas Salmon if you prepare it the day before .. I looked at the recipe but couldn’t find a suggestion.

    Nagi, you have changed my (coming) life ❤️ I will be forever grateful

    My question, when using a recipe from the UK which calls for double cream, what is the best Aussie substitute product? I suspect it is not the same as the double cream which I find in my local dairy case.

      Being from UK but living in Australia, one of the very few issues I have is the adulterated cream in the supermarkets. Very little pure cream, single or double. Gells and thickners are never needed unless a recipe asks for them.
      Harris Markets sell BigLittle pure double cream.

    I have never glazed a store bought ham, I always cook mine from scratch. How do I reheat a whole ham on the bone and glaze it from the fridge
