I’m so excited to be doing this! I’ve had the idea of a Christmas cooking hotline bubbling away in my mind for years, but I always hesitated because I worried it would be too much to handle on my own.
But now that JB is part of the face of RecipeTin and it’s not just me, there’s two of us here to answer your questions. So for the first time ever, we’re opening up a hotline for Christmas cooking questions, bringing together home-cook practicality and actual proper chef experience (JB!), which means more ideas and better problem-solving for you!

So drop your question in the comments section below and we will answer as many as we can (we need to sleep, and we have some other work things to finish!). Ask anything you want, like:
Can I make this ahead, freeze it, or reheat it?
What can I substitute if I can’t find an ingredient?
How do I scale recipes up or down?

How far ahead can I make the apple salad with candied walnuts and cranberries before risking them going brown? I know they are soaked in lemon but unsure if it means I can make it a few hours beforehand?
Hello I needs your thoughts on my roast potato dilemma.
I have 35 people to feed on Christmas Eve (we always do xmas eve, leaves the day for other faimy etc).
Have done it for years. Meat is done across 2 bbqs greens are microwaved.
All my roast veg are par-boiled day before, and I use 2 electric frypans to cook everything, then keep the batches warm in a pie wamer.
I have tried to roast the spuds in the oven, but I didnt leave thrm in long enough ( I panicked) because I had a few batches to do.
I would like to try the oven again, but I don’t know how long, or correct temp to use, bearing in mind I am cooking 70 pieces of potato.
Can you please tell me how you would cook the spuds. I am always trying to get the perfect roast potato

Hi will be cooking your Pork shoulder receipt for Christmas lunch and in order to save time cooking the veges on the day i want to par boil the roast potatoes the day before.some say after boiling let cool and dry the put in a sealed container in fridge. Do i put oil on the veg in the fridge or put on the day you are cooking some say yes and some say no,will the potatoes keep their colour overnight in fridge?. Can i do the same with other veg?. thankyou

My Husband bought a 4.7kg Angus Brisket for me to make your slow cooked BBQ brisket recipe. I haven’t tried yet as the meat is cryovacced, but I don’t think it will fit into my slow cooker. Should I attempt to cook in the oven, or chop a chunk of the brisket so it does fit?
Does the skin come off the ham more easily if i heat it first?
