JB and I are on call!

I’m so excited to be doing this! I’ve had the idea of a Christmas cooking hotline bubbling away in my mind for years, but I always hesitated because I worried it would be too much to handle on my own.

But now that JB is part of the face of RecipeTin and it’s not just me, there’s two of us here to answer your questions. So for the first time ever, we’re opening up a hotline for Christmas cooking questions, bringing together home-cook practicality and actual proper chef experience (JB!), which means more ideas and better problem-solving for you!

So drop your question in the comments section below and we will answer as many as we can (we need to sleep, and we have some other work things to finish!). Ask anything you want, like:

  • Can I make this ahead, freeze it, or reheat it?

  • What can I substitute if I can’t find an ingredient?

  • How do I scale recipes up or down?

  • Help, something’s going wrong – how do I fix it?

  • Menu planning, timing, or oven logistics chaos 😅

Even though our last day of work is this Friday, JB has generously agreed to continue helping me with questions right through to Christmas Eve. Thank you JB, you’re the best.

    I’m providing salads for Christmas day for 12 adults and 5 children. Others are bring meats and desserts. Can you suggest a good mix of ‘special’ christmas day salads with some ‘do ahead’ so I’m not preparing everything on Christmas Day? Thanks so much for any guidance and Happy Christmas!

    Hello and thanks so much for your fabulous emails and recipes. Can you recommend a freeze ahead gravy for turkey. I have veg and chicken thighs but not sure how best to make a gravy and not just a stock . Merry Christmas 🎄

    I am planning to make pavlova bombs- anything to keep in mind for tripling the recipe?
    Do you think doubling the recipe and making the size of the bombs smaller would also work? I am doing a few desserts but do want to make sure there is a pav bomb for everyone

    I have 8 guests for Christmas lunch. They are bringing a contribution which was agreed, except one guest is bringing a mass produced, albeit for an excellent cause, xmas pudding. How can I turn this from ordinary to something extra ordinary.

    Hi Nagi, do you have a solution for Tenderloin Roast for Christmas, when family members preferences range from rare to well done? Thinking of changing to slow cook shoulder of lamb.

    Hi Nagi and JB,
    I have been playing around with terrines and want to make one for the family over Christmas.
    I am currently eating a “country chicken terrine” (SBS food) and it’s a good candidate but I want to make it a bit lighter (as I am getting rounder by the day eating this one ..)
    Can I use half the speck cubes and a mix of (full cream Greek) yoghurt and cream instead of pure cream? (Maybe add a bit of flour to the mix). Will it still set properly?
    I did the same with a recent scallop terrine (recipe from Nagi’s mum) and that went fine (quite delicate) and still was delicious.
    Please let me know?

    Hi Nagi, I made the Foccacia bread 14 times. The first time was with your recipe and I must say that was the only time it came out well. The rest I followed numerous shorts, reels, youtube videos and they were unmitigated disasters. I am very distraught as a baker. I want to know is that bakers hide some crucial element or I am just bad. Is there an answer even to my question. Anyways I think you rock. Keep doing what you do and the way you describe steps is a craker. love Vishal
