JB and I are on call!

I’m so excited to be doing this! I’ve had the idea of a Christmas cooking hotline bubbling away in my mind for years, but I always hesitated because I worried it would be too much to handle on my own.

But now that JB is part of the face of RecipeTin and it’s not just me, there’s two of us here to answer your questions. So for the first time ever, we’re opening up a hotline for Christmas cooking questions, bringing together home-cook practicality and actual proper chef experience (JB!), which means more ideas and better problem-solving for you!

So drop your question in the comments section below and we will answer as many as we can (we need to sleep, and we have some other work things to finish!). Ask anything you want, like:

  • Can I make this ahead, freeze it, or reheat it?

  • What can I substitute if I can’t find an ingredient?

  • How do I scale recipes up or down?

  • Help, something’s going wrong – how do I fix it?

  • Menu planning, timing, or oven logistics chaos 😅

Even though our last day of work is this Friday, JB has generously agreed to continue helping me with questions right through to Christmas Eve. Thank you JB, you’re the best.

    Merry Christmas Nagi and JP, hope you get to enjoy downtime with loved ones and furry friends. i’ve learnt so much from you and much more confident to try new things. the chicken thighs/legs baked in their own gravy was amazing and just made my first batch of lemon curd and kidding myself that i have willpower to wait until i have someone else over before i fill a short crust flan vase i’ve already prepared and baked with the lemon curd and then scoff the lot because, i assume, the pastry could get soggy if i didn’t eat it all immediately….

    Hi Nagi & JB, I’m cooking a turkey buffe with fig and pistachio stuffing. What would be some wonderful prep ahead or easy sides to make it sing? Also, to gravy or not to gravy? Is there a great make ahead recipe for it? So many questions!! Please & thank you & Merry Christmas 🎅 to

    Any suggestions for estimating how much total nibbles, meat, potatoes/starch, veggie sides, and desserts for a set amount of people? Eg if we’re doing three meats (lamb, ham, chicken) how much to estimate per adult so we don’t massive over or under cater??

    I’m doing veggies for our hot lunch this year. I’ve got your maple roasted carrots, cheesy cauliflower and roast potatoes to do. As a mum of 2 young children looking at ways to make ahead. Any thoughts as to where and when I should start? Cheers in advance for your help!

    One of my “offerings” to my daughter’s Xmas lunch (probably not the best contribution idea cause she’s in Newcastle & I’m in Sydney) is beef w. chimichurri sauce.
    I can make sauce day before (probably better) but how do I best cook the beef the day before to keep moist. And I do need to cook it the night before.
    Thinking flatiron (Harris Farm) & on bbq or ? & keeping it whole & after resting wrap in foil before slicing on the day. Any hints?

    My partner is allergic to mustard. I sometimes get away by using horse radish and occassionally wasabi (although she my be sensative to that). What else can I try, and what are the substitution ratios for, sau, Hot English, and Dijon?
