JB and I are on call!

I’m so excited to be doing this! I’ve had the idea of a Christmas cooking hotline bubbling away in my mind for years, but I always hesitated because I worried it would be too much to handle on my own.

But now that JB is part of the face of RecipeTin and it’s not just me, there’s two of us here to answer your questions. So for the first time ever, we’re opening up a hotline for Christmas cooking questions, bringing together home-cook practicality and actual proper chef experience (JB!), which means more ideas and better problem-solving for you!

So drop your question in the comments section below and we will answer as many as we can (we need to sleep, and we have some other work things to finish!). Ask anything you want, like:

  • Can I make this ahead, freeze it, or reheat it?

  • What can I substitute if I can’t find an ingredient?

  • How do I scale recipes up or down?

  • Help, something’s going wrong – how do I fix it?

  • Menu planning, timing, or oven logistics chaos 😅

Even though our last day of work is this Friday, JB has generously agreed to continue helping me with questions right through to Christmas Eve. Thank you JB, you’re the best.

    I’m baking venison (leg) for Christmas & the recipe calls for an elusive ingredient …blackcurrant jam. I’ve turned myself inside out trying to find it without any luck. Do you have any tips on a substitute or alternative receipe?

    I have four attending on Christmas Day who are in their 80s – just wondering about a softish appetiser that is old fashioned enough for them to enjoy?

    Hi. I love making your no knead bread but would it work if I used part wholemeal flour (trying to lower gi) and topped with seeds, or even mixed them in? Thank so much if you could reply, Happy Christmas and bonne annee!

    Hi I’m planning on cooking a 2 Kg duck for Christmas. Will that be enough for 6 or 7 people?
    I know a chicken of that weight should.

      Hi Mark, – Unfortunately, it will not. A duck has so much more fat than chicken. A 2Kg duck will feed 3 – 4 people. When I cook a 2Kg duck it is enough for my husband and I, and then I make Nagi’s pad see ew with the leftovers.

    Nagi, once upon a time Masterfoods had a product called meat tenderiser that worked wonders on steak however because they can no longer obtain one ingredient to make it it has been discontinued. What else can we use to tenderise steak without bashing it.

    Why does my chocolate cake (but any cake) sink in the middle and crack?? Also when I pour my batter in how do I stop that annoying little belly button at the end of pouring? (I call it an outie)

    My oven just died and won’t be fixed my Christmas:! What can I make for a festive meal for two that is GF and does not require an oven? I do have a toaster oven, 4 gas burners and a slow cooker. No outdoor grill, too cold in Vermont, US.

      Slow cooker turkey breast, stove top glazed carrots, garlic green beans or peas, creamy mash or potato rosti or wile rice salad or lemon potato salad. All on my website! – N x

      You could substitute the usual turkey breast with “Saltimbocca”, little schnitzels,
      (which is italian and translates to jump-in-your-mouth.)
      Recipe here on the website.
      I would not recommend cooking them for a crowd. But it s a nice way to get some nice meat for two.

      And if you would want to stick to the italian theme, pick one of the “risotto” recipes and make some antipasti style veggies like “bbq grilled vegetables”, just pan fried, marinated over night.

    Ill be following you recipe for roast turkey and see you recommend a final temp of 75C. Can you give me a range? What’s the absolute minimum/maximum
