JB and I are on call!

I’m so excited to be doing this! I’ve had the idea of a Christmas cooking hotline bubbling away in my mind for years, but I always hesitated because I worried it would be too much to handle on my own.

But now that JB is part of the face of RecipeTin and it’s not just me, there’s two of us here to answer your questions. So for the first time ever, we’re opening up a hotline for Christmas cooking questions, bringing together home-cook practicality and actual proper chef experience (JB!), which means more ideas and better problem-solving for you!

So drop your question in the comments section below and we will answer as many as we can (we need to sleep, and we have some other work things to finish!). Ask anything you want, like:

  • Can I make this ahead, freeze it, or reheat it?

  • What can I substitute if I can’t find an ingredient?

  • How do I scale recipes up or down?

  • Help, something’s going wrong – how do I fix it?

  • Menu planning, timing, or oven logistics chaos 😅

Even though our last day of work is this Friday, JB has generously agreed to continue helping me with questions right through to Christmas Eve. Thank you JB, you’re the best.

    Hi Nagi, thank you so much for all the heart you put into your recipes and making them achievable for others. You are a first name basis in my household!
    I am in charge of charcuterie platters for a pre-Christmas event. Do you think I would be able to make the salami roses the day before the event and refrigerate them in a sealed container, and do you think they will hold and not dry out? Also would I be able to get away with decanting the dips into small bowls the day prior and covering them with foil or cling wrap in the fridge? (Planning on garnishing them on the morning, there is not a lot of prep time available on the day and sweltering heat here in NSW atm as you would know.) Thank you so much!

    Attempts to stir-fry meat (beef, chicken, etc) always result in the product giving off quantities of water which results in the meat “stewing” instead of browning. How can I overcome this problem. It applies mainly to supermarket meats as far as I can tell.

    This isn’t just a Christmas question. I see so many wonderful side dishes that need to be in the oven for perhaps 45 min. to an hour or need some resting. However my main dish cooks in the oven and needs to be served shortly (not a turkey). What’s the solution.

      Do you have an air fryer? I find mine really helpful for this problem as I only have 1 smallish oven. I will do sides that fit in the air fryer.

    We have a fancy family musical Christmas soiree Saturday . Everyone contributes food and it becomes the supper meal. I need beautiful, simple but substantial make ahead “appetizers” but not spicy. Recommendations?

    I tried making chocolate truffles before I found your recipe so I didn’t use butter (just chocolate and cream). The mixture was very stiff and hard to shape into balls. Will using butter make it softer and easier to shape into balls? I will definitely use the tip to use frozen peas to keep my hands cold!

    I love cranberry-orange sauce, but can’t eat cranberry anymore because of one of my medications. I do miss it! Do you have a fruity substitute, maybe made with something like dried cherries? Thanks!

    Please give me tips on how to “trim” chicken thighs! I don’t use them because it takes me so long to clean them up before cooking with them. Most chicken recipes call for thighs!

    OMG! Love that you guys offer this at this time, it’s so incredibly helpful and it came at the right time for me.

    My qn: Can we double the Potatoes au Gratin (Dauphinoise) recipe? If yes, what do I need to keep in mind? Does anything change? How long would the first bake be?

          Thank you Tiffany, I was thinking the same thing, maybe upping the portion if I’m doing it as a main.

          I’m curious, are you doing any sides with it? Trying to think of something a bit light, as the Coquilles St Jacques are definitely going to be on the heavier side between the bechamel and the gratin on top :p
