JB and I are on call!

I’m so excited to be doing this! I’ve had the idea of a Christmas cooking hotline bubbling away in my mind for years, but I always hesitated because I worried it would be too much to handle on my own.

But now that JB is part of the face of RecipeTin and it’s not just me, there’s two of us here to answer your questions. So for the first time ever, we’re opening up a hotline for Christmas cooking questions, bringing together home-cook practicality and actual proper chef experience (JB!), which means more ideas and better problem-solving for you!

So drop your question in the comments section below and we will answer as many as we can (we need to sleep, and we have some other work things to finish!). Ask anything you want, like:

  • Can I make this ahead, freeze it, or reheat it?

  • What can I substitute if I can’t find an ingredient?

  • How do I scale recipes up or down?

  • Help, something’s going wrong – how do I fix it?

  • Menu planning, timing, or oven logistics chaos 😅

Even though our last day of work is this Friday, JB has generously agreed to continue helping me with questions right through to Christmas Eve. Thank you JB, you’re the best.

    i would like to find out if u can bring cool receipe for diabetic type 2 coz i am diabetic and i love ur cooking and i wish to get new book from u nagi. also i didnt like beetroots as i am small picky with the food lol also wish u merry xmas and hope have a good one with ur family and friends for xmas lunch and dinner . hear from u soon .
    p.s i am deaf with wearing the cochlear implants and i can speak very well with my lipreading and i love cooking also want to be good healthy than fatty food .cheers

    I am planning to make the Christmas Salmon. What recommendations do you have for accompaniments. Potato mash is often used with salmon, but I want something special for Xmas day

    Is there a non dairy substitute for condensed milk?
    Granddaughter has major food allergies and / or anaphylactic reactions to dairy, nuts, eggs, gelatine, some fruits. I am wanting to make her some truffle type treats we can all eat but not sure if there is a substitute for condensed milk that won’t affect her.

    Made your shortbread too and going to try it with Nuttelex as a butter substitute for her. The best ever!

      Hi Mary,
      My kids are dairy free.

      You can find oat condensed milk or coconut condensed milk at Coles and Woolworths these days!

      If you need cream subs, there is oatly oat cream (great for a potato bake) and Flora plant cream which is a great alternative for sweets as it whips quite well.

      Hi Mary,

      My kids are dairy free.

      You can get sweetened condensed oat milk and sweetened condensed coconut milk at Woolworths and Coles these days.

      If you ever need cream substitutes, Oatly oat cream (great for potato bake /savoury dishes) and Flora plant cream ( great for sweets as it whips quite well) are also available at Woolworths and Coles.

        I will go and check out your suggestions to see if suitable for her.
        Grocery shopping takes forever double checking ingredients and she is so restricted with her diet. I want to make her something special as a treat that we can all eat at Christmas!

          I hope they are suitable options for her Mary.

          My son has allergies to Coconut, egg, nuts, legumes, soy and milk so completely relate to the grocery shopping taking ages and labelling reading.

          I’ve also had to avoid those foods as well due to breastfeeding and it really can feel like you are missing out at this time of year with all the special treats and foods.

          You sound like an amazing grandparent going the extra mile so she can be included.

    Hi Nagi, I’m cooking a pork belly for Christmas and using your recipe but I am changing the fennel to a bbq rub. My question is, if I follow your cooking instructions, will it still cook the same? Or turn out the same?

    Hi, My pastry for fruit mince pies is sticky, difficult to roll and breaks. It lacks elasticity, though does taste great! I’ve chilled it for an hour before rolling. Any suggestions?

    I’m looking to cook or make some small treats (sweet or savoury) for Christmas gifts for guests but I’m struggling with ideas. I was initially thinking a small jar of curry paste, lemon curd or a slice wrapped up. Just a thoughtful homemade something to help lighten the load for others but doesn’t spoil quickly. Please help!
